Mine's been running for about two years now with Amahi and Untangle happily coexisting. I set mine up because I have three teenagers at home and needed control over their internet usage that I couldn't find anywhere else. The learning curve for these systems is kind of steep simply because they are so much more powerful than typical home router operating systems.
DHCP setup on Untangle (and Sophos too I imagine) is similar to most any other router setup. I normally would dive into pfSense and tinker with everything at a lower level with Snort rules and all that but it seems people who moved from pfSense to Sophos or Untangle really enjoy the GUI and reporting which the graphs and charts do seem enticing to give me a better look into my network without having to stare and go through logs in pfSense. On Untangle I have set the Amahi machine as the first DNS server with OpenDNS as the subsequent DNS servers. If you eliminate Untangle and run everything through Sophos what do the results look like. Sophos Home UTM has a 50 IP address limit. You will need to have two NICs (or a dual) in your Sophos box. Just to clarify, you mentioned Sophos and Untangle but all the details only mention Untangle. Sophos Home is intended for Home use only. I have the Untangle box connected to the modem and the Amahi box (and all other clients) connected via switch and wireless access point behind the Untangle box.
